Gluten Free Beyond Meatball Sub

Yield: 16 meatballs / 4-5 subs


Ingredients:


Beyond Meatballs:


-1 pack of beyond meat plant based ground

- 1/2 medium onion

- 2 large cloves of garlic

- 1 large egg

- 1/3 cup of violife parmesan

- 1/2 cup of gluten free bread crumbs

- large pinch of chopped parsley

- 1/2 tbs crushed red pepper

- 1/4 tbs Italian seasoning

- splash of worcestershire

- salt and pepper

*only use half the amount of crushed red pepper if you don't want it too spicy*





Marinara Sauce:


- 1 796ml can of crushed tomatoes

- 1 398ml can of crushed tomatoes

- 4 cloves of garlic

- handful of chopped parsley

- about half the amount of basil

- 1/2 tbs crushed red pepper

- 1/2 tbs of Italian seasoning

- salt and pepper

*only use half the amount of crushed red pepper if you don't want it too spicy*


Other:


- 4-5 portions of buns (I used Udi's gluten free baguette)

- 1 onion

- 1 orange bell pepper

- 4 cremini mushrooms

- violife shredded mozza

- 4-5 medium potatoes for fries


Instructions:


  1. First we are going to prepare our beyond meatballs. Chop up your onion, garlic and parsley. Then put all the meatball ingredients into a large mixing bowl. Use your hands to mix everything together. Once it is mixed you can start forming your meatballs. It should make around 16 good sized meatballs. Set them aside on a plate or tray.

  2. Heat a large deep dish pan on the oven with oil on medium heat. Once the pan is hot you can add in all your meatballs. We are just looking to brown and crisp up the outsides of all the meatballs, don't worry about cooking them all the way through, because they are going to simmer in our marinara sauce later on. Once all the outer edges are browned we can take all our meatballs out and set aside.

  3. Using the same pan we are going to start our marinara sauce (using the same pan to not lose any flavour). Chop your 4 cloves of garlic, parsley and basil for the sauce. Add some more oil into your pan and toss in your garlic, fresh herbs and dry spices. Fry these for about a minute (until garlic starts to brown) and then you will add in your two cans of crushed tomatoes. Stir everything together and turn your heat down low to simmer. Season generously with salt and pepper.

  4. Once the sauce is simmering place all your meatballs in the sauce and make sure they're all covered. Put the lid on your pan and let simmer for at least an hour (I simmered mine for about 2 hours). Check up on your sauce every now and then to give a little stir and taste. Feel free to add more salt if you think it needs it.

  5. Once your meatballs have been simmering for about an hour you can start to prepare your fries. So first we will slice all our potatoes into long strips. Bring a large pot of salted water to a low boil and partially cook your potatoes. You don't want to fully cook them, you will want them to still be a little hard in the middle because we will finish them off in a pan. Once the potatoes have been partially cooked you can drain them and set aside.

  6. Preheat oven to 400. Slice an onion, orange bell pepper and some mushrooms for toppings on your sub.

  7. Now we are going to do some multi-tasking. We are going to heat up a medium sized pan with oil to fry our toppings on medium heat and then we are also going to heat up a larger pan to medium heat with a generous amount of oil to fry our fries. Once pans are heated you can add everything into the pans and season with salt and pepper. Once the mix of toppings have cooked and browned you can turn the heat off and keep them warm on the burner. Keep an eye on your fries, using tongs you will want to flip them once golden brown (be careful of splashing hot oil).

  8. Butter your buns and throw them into the oven just for a few minutes to heat them up, set them aside once they are heated.

  9. By now your fries should be nice and golden on both side, you can take them out and place on a draining tray or paper towel to get rid of excess oil.

  10. Now everything is ready and it's time to build our sub!!! First start off by placing your onion, pepper, and mushroom mix onto the bottom of your bun. Using your tongs you will now place your meatballs on the sub (should fit 3-4 depending on the size of your bun). Add a little bit more marinara on the meatballs if you want your sub to be nice and saucy. Add some shedded cheese on top of the meatballs and then broil the sub in the oven for just a couple of minutes until the cheese melts and becomes crisp. Remove from the oven, top with some parmesan and chopped parsley/basil.

  11. Serve with your fries and a side of ketchup, marinara, ranch or whatever you like to dip your fries in. You will probably also want to have some napkins close by for this one. ENJOY!!!!
