Hot Honey Miso Udon


Serves 2 | Prep time: 5 min | Cook time: 10 min



Ingredients:

  • 400g pre-cooked udon noodles

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 6–8 fresh sage leaves

  • 2 cloves garlic, minced

  • 1 tbsp white miso paste

  • 2 tbsp hot honey

  • 2 tsp soy sauce

  • 3 tbsp hot water (to loosen the sauce)


Instructions:


  1. Place the udon packs (still sealed) in a bowl of hot water for 1–2 minutes until pliable. Open and gently separate the noodles with your hands or tongs, then set aside.


  2. In a large skillet over medium heat, melt the butter and olive oil together. Add the sage leaves and let them sizzle until crisp, about 1 minute. Remove them and set aside.


  3. Reduce the heat to low, add the garlic, and cook for about 30 seconds until fragrant. Stir in the miso and hot honey until smooth. Add 2–3 tablespoons of hot water to loosen the sauce, then stir in soy sauce and taste to adjust.


  4. Add the noodles to the skillet and gently toss until fully coated and warmed through. If the sauce is too thick, add another splash of water.


  5. Serve hot, topped with the crispy sage.
