Pesto with Basil and Parsley


We recently made a delicious homemade pasta dish and used this pesto as a sauce and it was absolutely delicious. This pesto can also be used for many other things such as bread, pizza, potatoes, frittata, fish, and the list goes on and on.


Here is what you'll need to make it:


1/2 cup packed of fresh basil chopped

1/2 cup packed of fresh parsley chopped

1/3 cup of sliced almonds (can sub for walnuts or pine nuts)

1/3 cup of grated pecorino romano cheese

2 cloves of garlic peeled

1/4 cup of olive oil

Juice from half a medium lemon

salt and pepper to taste


To make homemade gluten-free pasta we used this recipe from Good For You Gluten


Instructions:


  1. Add your chopped basil, parsley and sliced almonds to a food processor and pulse until well mixed together. Be sure to scrape down the sides as needed.

  2. Add in the grated romano cheese and peeled garlic and continue to pulse until well mixed.

  3. Keep the food processor running as you slowly pour in the olive oil.

  4. Juice half a lemon and add the lemon juice in as the processor is running.

  5. Once everything is well incorporated season with salt and pepper to your preferred taste.

  6. If you're using this pesto for pasta we recommend saving 1/2 cup of your pasta water before straining the noodles. Add your pesto to a preheated pot on medium heat. Add a splash of the pasta water and stir. Add pasta into the pot and toss around to cover all the noodles with sauce. You can add more pasta water if necessary to coat all the pasta.

  7. Serve with some sliced chicken breast on top and some additional grated romano.

  8. Enjoy!
