Gluten Free S'more Cookies

These s'more cookies are the ultimate camping treat that you can bring on the go. Chewy, delicious and packed with goodies, these cookies are gluten free and also easily made vegan.


This recipe makes 1 dozen cookies.


Here's what you'll need:


2 cups almond flour

1/2 teaspoon baking powder

1/4 cup butter or vegan butter, room temperature

3 tablespoons maple syrup

1 splash of vanilla extract

1/2 cup dark chocolate

1/2 cup of marshmallows or vegan marshmallows

1/2 cup of gluten free graham crackers (I use kinnikinnick)



Here's what you'll do:


  1. Preheat the oven to 350.

  2. In a large mixing bowl combine the butter, maple syrup and vanilla extract until smooth. Add in your almond flour and baking powder until completely combined.

  3. Chop the marshmallows and crumble the graham crackers.

  4. Mix the chocolate chips, marshmallows and graham crackers into your batter.

  5. Using a table spoon scoop your batter into balls and place on a baking sheet lined with parchment paper.

  6. Bake cookies for 13 minutes or until they are golden around the edges and bottom.

  7. Allow cookies to cool on baking sheet for 10 minutes and then transfer to a cooling rack.

  8. Enjoy while still warm and gooey and share with your friends and family :)
