Black Sesame Blood Orange Molten Cake


Serves: 2 large ramekins

Prep Time: 15 minutes

Bake Time: 12 minutes


Ingredients:


  • 3 tbsp toasted black sesame seeds

  • 2 oz semi-sweet baker's chocolate chopped

  • 3 tbsp butter

  • 2 tbsp black sesame paste

  • 1 large egg

  • 1 large egg yolk

  • 3 tbsp powdered sugar

  • 1 1/2 tbsp all-purpose flour

  • 1/2 tsp vanilla extract

  • 1 blood orange zested

  • 1/2 blood orange juiced

  • Pinch of salt


Optional for serving:

  • Candied blood orange slices

  • Blood orange reduction

  • Powdered sugar for dusting


Instructions:


  1. Butter two 6 oz ramekins and dust with cocoa powder. Tap out excess and set aside.


  2. Grind black sesame seeds finely using a spice grinder or mortar and pestle. Set aside.


  3. In a heatproof bowl, combine chopped chocolate, butter, and black sesame paste. Set over a pot of simmering water (double boiler) and stir until smooth. Remove from heat and let cool slightly.


  4. In another bowl, vigorously whisk the egg, egg yolk, powdered sugar, and vanilla until pale and slightly thickened, about 2 minutes by hand.


  5. Slowly whisk the chocolate mixture into the egg mixture. Add flour, ground sesame, blood orange zest, blood orange juice, and salt. Stir gently until just combined.


  6. Divide the batter evenly between the two ramekins. If time allows, chill for 15–30 minutes in the fridge, this helps the centers stay molten.


  7. Bake at 425°F for 12 minutes. The edges should be set, but the center still soft. A slight jiggle in the middle is perfect.


  8. Let cool for 1 minute. Run a knife around the edges and invert onto plates or serve directly in the ramekins. Top with candied blood orange, blood orange reduction and a dusting of powdered sugar.
